Please read my blog post all about new found inspiration from Cupcake Jemma on Youtube… I got this recipe from her – one of her classic go-to’s she says =) and I’ve put it on chocolate cupcakes but as Jemma says in her video – you can put it on ANYTHING! How exciting.

I also used pre-made salad caramel sauce that I had left over from Christmas but I’ll make it from scratch next time – promise.

 

INGREDIENTS:

For the caramel…
150ml water
250g caster sugar
250ml double cream
1 tsp vanilla extract

Or use about 2 tablespoons of ready-made salted caramel sauce available at most supermarkets (the big branches).

For the buttercream…
200g unsalted butter, soft
2 tsp salt
320g icing sugar, sifted
1/4 batch of the caramel.
